Fireside delights

ITS CAMPING SEASON!!!!!

AND THE HEAT.... IS.... ON!

Some of my best memories are of campside dinners made from scratch. And Ooey Gooey smores by the fireside with loved ones. So here are some simple ideas for a great bonfire night of food and fun.

Corn on the cob
soak in salted water for about 10 min
One ear per person, prepare by cutting away the tip and the bottom of any left over stalk. Grasp in your fingers and pull the husk open gently just to open it up without ripping the hole thing apart. Spray the inside with a spray butter. Reclose the husk up. wrap with a layer of aluminum foil. 

Place on the coals and let cook. check in 10-15 for doneness. Let cook longer if not done. 

Chicken and mushrooms with swiss cheese.

One chicken breast per person, sliced long ways about 3 slices per breast. Stuff with sliced porchini and button mushrooms. Cover with a slice of GOOD Baby Swiss. Wrap in foil thick. Set in coals. 30-1 hr cook time depending on size. 

Sausage in natural Casings: 

2-3 per person
wrap in foil to cook then place on long fork and sizzle that puppy.

Mushrooms placed in a foil pouch sprayed liberally with butter and salt are very good on the sausage.

Snow Days

Today is such a cold, snowy day. If your like most of us that means you cant get out unless you have 4x4 or snow mobile. so i did next best thing .....broke out the makings for hot chocolate. I use my favorite type of hot chocolate mix in a mu with steaming hot water and half of a cup of milk . i know it sounds strange but its the perfect combo for creamy hot chocolate. 2 pouches emptied in the cup mix well adda scoop of your favorite ice cream. and you have a sweet winter treat fit for a snow queen. Be safe,be warm and have great treats.

Experimentation

Well alot of cooking is all about experimenting. So I do this quite often. My favorite store to shop at for most of my baking essentials is Gordons Food Service. I usually end up spending about $170 in there every time I go in. So i bought this butter flake roll mix.. I have used this stuff to make so many different things. You just follow the recipie to make the rolls and you can add in shredded cheese, garlic, and italian seasonings to the mix then brush them with garlic butter and you have Garlic Cheddar Herb Rolls. Or you can add cinnamon, sugar, and vanilla to the mix top with a cinnamon sugar sprinkles and bake and voila you have cinnamon rolls.  You can also use this stuff in a more liquid form to make great onion rings. So experiment with your ingredients you never know what you may come up with even if it fails, next time you will have an idea of how to fix it.

First Bite.

This is my first of many posts....

 At first I will most likely be on here randomly til I get a rythmn going. But I want everyone that joins to post s much as they can and want.

During a conversation yesterday I realized that I miss my days as a caterer. I still cook at home every day. And always subject my husband to new recipies and new tastes. Not always do they turn out best but mistakes help us form our inner chef.

 I also like to visit restaurants and little known Mom and Pop Shops where the service is freindly, the food cheap, but the meals are always Big, Tastey and filling. These little shops are accross the country and some are in danger of closing, but most have been open for decades. Recipies passed on from Mother to Dauther, Father to Son.. so on and so forth. It is out duty as foodies to keep these places dreams Alive...


 I encourage everyone out there on the weekends when your bored and have nothing to do .. turn that T.V off, unplug the modem, and either get in the car and drive to some unknown destination and Try the first restaurant you see or get your family up off the couch and cook a meal together. Its the best time you can spend laughing, growing, and bonding.
